MAEKWAN STORY

Piper Nigrum
It starts it's life as bushells of pepper on trees which grow as high as 8m. In Autumn when the bushells are bright green local farmers harvest the product and place it out to dry in the sun to dry. We take the dried bushells and separate the Maekwan pepper from the twiggy branches upon which it grows. When the seeds are dry in the sun, we collect them for exotic pepper to be used in cooking. Once prepared we vacuum pack the Maekwan for you the customer so it is ready to use.

This wild pepper is harvested and consumed in Northern Thailand. By virtue of its limited production, this product has not been commercialised. Botanically it has hints of Sichuan pepper; however it's aroma is quite different. somewhere between pepper and aniseed.
